Stearic Acid and Stairwells

Dinner.
30 day dry aged ribeye with raw milk Gorgonzola. Sweet potato with goat milk butter. Malbec. Chocolate truffle for dessert.
I can eat this way for 37 more years.

Out of town. Food bought at the local supermarket.
Roast beef and cheddar sandwich with veg on buttered sourdough bread. Mustard. The Brussels Sprouts are roasted with garlic, parmesan and uh oh, olive oil. Pinot noir.

Dinner before an out of town stair climb.
Ham and cheese on a baguette. Eaten in a hotel room.
I ate more stuff too. Forgot to take a photo.

Taking food photos is tougher than it seems.
Either I forget, or the photo looks dark and not too appealing.
Going forward, I’ll be updating maybe, once every couple weeks.

In the meantime, I’ll continue shrinking my chassis.
 
So what's been going on since my last post?
For the last couple weeks, I've been doing a relaxed version of TCD.
Eating mostly from the list of less than optimal food list.
Meaning, pizza. Quite a bit of pizza. And ice cream. Only the kind made with cream and sugar. No PUFAs!

I'm happy to report that although I haven't lost weight, I haven't gained either.

Today is twelve weeks until TSC. Time to eat mostly from the optimal food list.
Tonight's dinner will be my favorite, steak and buttered rice.
I'll post a pic.
 
So here’s the pic.
Decided to change things up.
Steak before it’s cooked.
16.3 oz American Wagu strip.

Gonna cook it medium rare. Eat it with a side of buttered rice.
 
I love your food pics but you're killing me. I've not eaten dinner yet! Lol. Off to the kitchen.
 
This week most of my meals have been protein/buttered rice/veg combos.

Monday’s dinner at home.
Ground beef, rice, Brussels sprouts. Topped with sour cream.

Tonight I bought a meal to go.
Steak/Jasmine rice/Broccoli and carrots. Topped with butter.

Much to my delight, I have discovered many desserts without PUFAs.
For example, lemon butter cake.
Butter, sugar, flour, eggs, milk, vanilla, sour cream.
I added some raspberries. Topped it with whipped cream after the photo.

Stair climb in Las Vegas on Sunday.
Reservations at Old Homestead steakhouse on Saturday.
I know what my pre-race dinner will be.
Old Homestead burger
10oz dry-aged patty, foie gras butter, cheddar, duck-fat fries
The fries are fried in duck fat!

Update....This was as good as it looks. So good that I ate it on Saturday and Monday!

Yesterday I had an official weigh in for a DL event.
127 lbs, right in the middle of my weight division.
That's after consuming excessive stearic acid in Las Vegas. The eating fest continued when I returned home too.
I kept to my daily 20 hour fast, other than that, all bets were off (betting....las vegas reference).

I fully expected to have eaten my way out of my weight division. Instead, I'm smack dab in the middle.
I did have my share of non PUFA carbs, However, most of my meals centered around protein.
This way of eating seems to have naturally shifted my meals to Carnivore.
 
Steak, pizza, burgers.
These meals have been in regular rotation.

Time for another experiment.
Cook up some Croissant Diet proteins.
That means avoiding chicken and pork.

Get a pizza.
Neapolitan style.
Neapolitan pizza is thin crust and light cheese.

Top Neapolitan pizza with Croissant Diet protein.
Add some arugula/assorted greens, veg.

Eat this way for 30 days.
What the heck, let's give it a try.
I'll take photos.
 
On the road.
The town I’m in doesn’t have a Neapolitan style pizza place.
No problem. I brought one with me.
Also, Sunday’s leftover steak.
Here’s what I did.
Warm steak in my portable burner. Pizza is patiently waiting..

Next step, steak on pizza. Cold slice on a medium setting for 2 min. Sprinkle couple drops of water in pan. Cover and cook on low for one more minute.

And here’s what you get.
Crispy bottom. Melty cheese goodness. Top with arugula and a squeeze of lemon.
Repeat until all the pizza is eaten.

The pizza experiment has to be put on hold.
Not because I’m sick of pizza!
It’s because I’m traveling to towns without local pizza.
I don’t want to eat the doughy fast food pizzas. I’m sure they are full of PUFAs and chemicals. That ain’t pizza!

Going forward, pizza is on the menu if it’s a local joint. In the meantime, back to TCD.
