First, great work Anna!.

5/3/1 gets a bit of criticism in some quarters for relatively low volume (although you can fill it with insane amounts of assistance work), I wonder if this reveals itself on the press.

In the original book the volume was a bit low, but you're right that Wendler recommended assistance work to fill the volume gap. That was probably the result of his having trained Westside style which uses lots of assistance work. His more recent books focus more on getting in sufficient volume with the actual lifts. Joker sets and down sets are good. And if you're really in the mood for some volume try his Boring But Strong template. I believe this is on Wendler's blog. This has you doing 10x5 for the main lifts. Wendler recommends doing it for 1, at most 2, of the lifts, but as he says, the young kids will want to do it for all 4 lifts. The goal of BBS is to do 10x5 with 85% of your training max.
