I have been making water kefir using store bought juice for my secondary fermentations, and it is going very well.
I have been thinking of making my own cold pressed juice for my secondary fermentation - as a way to get even better taste and possibly - more vitamins.
I have been wondering if there would be any benefit in terms of the vitamins in the finished drink if i used fresh cold pressed juice? Or would i be wasting my time?
In other words does the secondary fermentation process consume the vitamins in the juice, or do the vitamins survive the secondary fermentation process?
i have been trying to look it up, and most articles always say the finished water kefir drink has b vitamins, and probiotics, but i cant really find anything about the vitamins of the source juice.
