Nutrition Fat and Frustrated

I recently started tracking my macros again and maintenance is around 3000.

Low 2k is not maintenance but a number for consistent fat loss. Most men if they aim for 2k, this gives them 200-400 grace and they will still lose their pound or so a week.
 
To the OP... Sounds like you're overthinking yourself to death. I don't think it's healthy mentally to be worried about literally 1 lb. My weight fluctuates probably 4 lbs within a day or two and I'm only 5 '7 162lbs or so. Calories in vs calories out IIRC. Also, a lot of people probably think that they're more active than they actually are, and also eat healthier/less calories than they actually do. Bottom line, there's no easy way to lose weight. My recommendations would be cardio and eating at a deficit in combination with strength training, but YMMV.
